  1. Add diced tomatoes and tomato liquid to a large bowl. Salt the tomatoes, give them a quick toss, and rest for 30 minutes.
  2. Mix olive oil, garlic, basil, and balsamic vinegar with salted tomatoes, cover, and rest for an additional 30 minutes or overnight. If you leave the mixture overnight, be sure to cover it.
  3. To prepare the pasta, salt the water liberally and boil; then cook pasta according to package instructions. Drain and toss lightly with olive oil.
  4. Immediately before serving, add tomato mixture to pasta; then add goat cheese and toss.
  5. Serve with additional crumbled goat cheese and balsamic vinegar for drizzling.
